Cha-Cha Lettuce Wraps

1 lb. ground turkey
1 Tbsp olive oil
4 cloves minced garlic
1/2 tsp grated ginger
1/2 cup thinly sliced red pepper
1/2 cup thinly sliced onions
1 cup drained black beans
1 cup drained corn
1 cup Cains® Fat Free Raspberry Vinaigrette
1 head iceberg lettuce
1 cup Cains® Peppercorn Parmesan
2 Tbsp freshly chopped cilantro 
Brown the ground turkey and remove from the pan. In the same large sauté pan over medium-high heat, add the olive oil and garlic, cook for 30 seconds. Add the ginger, red pepper and onions and saute for 2 minutes.

Add the cooked ground turkey, black beans, corn and the raspberry vinaigrette and cook for another 2 minutes. Hold warm for service.

To prep the iceberg lettuce cups, remove the core, rinse the head with cold water, and shake off the excess water. Cut in half and separate the leaves. Pat the leaves dry with paper towels.

Place a scoop of the turkey mixture in the middle of each lettuce cup. Top with some Peppercorn Parmesan dressing and garnish with chopped cilantro. Do not over-fill the lettuce cup.
