Maine Raspberry Walnut Chicken Salad
4 cups bite-sized pieces boiled or roasted chicken
3 celery stalks, thinly sliced
½ cup walnuts, coarsely broken
¼ tsp salt
Ground black pepper to taste
¾ cup Cains® All Natural Mayonnaise
¼ cup Cains® Light Raspberry Vinaigrette Dressing
½ cup red grapes, sliced in half (optional)
French bread or lettuce
Mix chicken, celery and walnuts together. Add salt and black pepper. In a separate bowl, mix or whisk mayonnaise and dressing together well. Add mayonnaise mixture to chicken and blend. Before serving, mix sliced grapes into salad. Serve on Crusty French bread or on a bed of crisp lettuce.
