Marinated Shrimp with Orzo

1 box orzo pasta 
6 Tbsp olive oil 
1 clove garlic, minced 
¾ lb shrimp (peeled & deveined) 
juice from 1 lemon 
8 oz Cains® Peppercorn Parmesan Dressing 
4 plum tomatoes, chopped 
1 small yellow pepper, chopped small 
½ bunch oregano, finely chopped 
1 bunch scallions, chopped 
salt and pepper to taste 
1 head iceberg lettuce cut into large pieces 
Cook orzo according to the package directions.  After cooked, drain and cool. Heat oil in medium size skillet. Add garlic and shrimp. Cook until shrimp is just cooked through. Remove from heat and add lemon juice. Allow shrimp to cool. Chop shrimp into small chunks. Mix remaining ingredients together. Serve at room temperature with chunks of crispy lettuce.
