Primavera Shrimp Salad
1 - 12-oz rotini pasta, uncooked
1 package frozen cooked shrimp
1 cup small fresh broccoli flowerets
1/2 medium red bell pepper, chopped
1/2 medium red onion, sliced
1/2 cup shredded carrots
3/4 cup Cains® Mayonnaise
1/4 cup skim milk
1 Tbsp lemon juice
1 tsp dill weed
Cook rotini pasta according to package directions. Prepare to thaw shrimp according to package.
In a large bowl, combine cook pasta, thawed shrimp, broccoli, red pepper, onion and carrots.
In a small bowl, blend mayonnaise, milk, lemon juice and dill. Add to salad mixture, toss to coat. Cover; chill throroughly. Stir gently before serving. Refrigerate leftovers.
Makes 6-8 servings
