Zesty Newport Potato Salad

2 lbs (5-6 med) Red Bliss potatoes, scrubbed and quartered 
½ cup Cains® Mayonnaise 
¼ cup dill relish 
½ cup scallions, chopped 
2 Tbsp fresh parsley, chopped 
2 Tbsp cider vinegar 
½ tsp dried tarragon 
Salt and fresh ground black pepper to taste
In a large pot, cover potatoes with cold water and bring to a simmer over medium heat. Cook until tender, 10 - 15 minutes. Drain and let cool for 5 minutes. Cut into ½ inch cubes. In a large bowl, stir together remaining ingredients. Add potatoes, stirring gently to combine. Serve warm or chilled.
